Takagi Shuzo
Takagi Shuzo has been crafting remarkable sake since 1884 in Akaoka, Kochi Prefecture, a vibrant merchant town steeped in history. Over the decades, the brewery has faced numerous challenges, but its commitment to quality and perseverance has carried it through by honoring and becoming a cultural pillar of the local community. One of their most iconic cultural contributions became a staple of the lively Dorome Festival in Akaoka, where oversized cups of the brewery’s sake take center stage in spirited drinking contests, bringing people together in celebration.

Now the sixth-generation brewer, Ippo Takagi, has emerged as a dynamic force for the future. Deeply rooted in tradition yet forward-thinking, Ippo blends data-driven insights with traditional craftsmanship to refine the brewery’s sake. His vision revolves around the “Tosa Experience Sake” -- a concept that highlights Kochi’s unique identity by using local ingredients like Tosa Urara rice and local yeast strains such as Cel-24. Under Ippo’s guidance, the brewery crafts a diverse range of sake, from the delicate to the robust, that encapsulates the flavors and spirit of Kochi.
