What makes BŌKEN Ringo so unique?

BŌKEN Ringo is a truly rare gem, crafted with the highly exclusive Cel-24 yeast strain, which is licensed for use only in Kochi Prefecture, southwestern Japan. Its brewer, Takagi Shuzo, was one of the two pioneering producers to adopt Cel-24 during its development in the late 1990s, making BŌKEN Ringo one of the original Cel-24 sakes. This distinctive yeast imparts the sake’s vibrant, apple-forward aroma and an intensely aromatic, modern profile that sets it apart from traditional styles.

Kochi Prefecture’s natural conditions further amplify BŌKEN Ringo’s uniqueness. With 84% of its land covered in lush forests and frequent typhoons shaping the region, cultivating the renowned Yamadanishiki rice variety is challenging. Instead, the resilient local rice varieties, Tosa Urara and Gin No Yume, are used, chosen for their shorter stalks that withstand strong winds. This combination of rare ingredients, pioneering craftsmanship, and Kochi’s distinctive environment ensures BŌKEN Ringo is not only scarce but a one-of-a-kind sake experience.
